The recipe takes a slightly unconventional approach by incorporating apple purée, to add both moisture and nutrients, and the result is in an incredibly moist and rich brownie. Perfect for those being intolerant to gluten and don’t want to compromise on taste.
Instructions:
Start by setting up a double boiler. Place a large bowl over the counter, fill it with hot water. Place a smaller bowl into the larger bowl, ensuring it doesn’t touch the water.
Add the dark chocolate to the smaller bowl and stir occasionally until it is completely melted and smooth.
Add the egg yolks to the melted chocolate, stirring continuously to combine thoroughly.
Clean, chop, and blend the apple until it reaches a puréed texture.
Add the apple purée to the chocolate mixture and stir well to combine. If the mixture starts to harden, return it to the double boiler and continue stirring until it is smooth and well combined.
Gradually add the almond flour to the mixture, stirring constantly to ensure it is evenly incorporated.
In a separate bowl, whisk the egg whites until they form stiff peaks.
Gently fold the whipped egg whites into the chocolate mixture, a little at a time, stirring gently to maintain the airy texture. Continue until the mixture is smooth and light.
Preheat your oven to 365°F (185°C).
Line a baking pan with parchment paper and pour the brownie batter into the pan, spreading it evenly.
Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
Let the brownies cool in the pan before transferring them to a serving plate.
Just before serving, sprinkle the top with cocoa powder for a nice finish.
