I can say with confidence that Portugal is a real paradise for gourmets. Today, pastel da nata is a classic Portuguese dessert. These are crispy cakes stuffed with custard that just melt in your mouth. The taste of pastel de nata is incredibly tender due to the light dough and delicate custard. Although the original recipe is still kept secret, today you and I will prepare this dessert according to a slightly simplified recipe. It will not be such a traditional taste, but I'm sure it will be similar and you will like it.

Ingredients for dessert Pastel de Nata
500 g of yeast puff pastry
1 st. l. flour
300 ml of milk
150 g of water
150 g of sugar
4 egg yolks
1 tsp. cinnamon (or 1 stick)
½ lemon (zest)
1 st. l. flour for sawing
Step-by-step recipe for Pastel de Nata
Pour 200 ml of milk into a saucepan or small saucepan and add 1 tsp. cinnamon. You can use a cinnamon stick instead of ground, then you will need to get it.
Grate the lemon zest on a fine grater, without capturing the white part, which can give bitterness. Heat the milk over low heat.
For the syrup, pour 150 ml of water into another pan and add 150 g of sugar. Stir with a whisk and heat to dissolve the sugar in the water. Then set aside and allow to cool slightly.
Next, mix the remaining 100 ml of milk in another pan with 1 tbsp. l. flour, stir well with a whisk until smooth.
Then add a mixture of milk and flour to a mixture of milk with cinnamon and zest. Stir constantly with a whisk over low heat until smooth. When the mixture becomes thicker, remove it from the heat. Allow to cool slightly and add the sugar syrup, stirring too.
Add 4 egg yolks to the cream and mix thoroughly. The mass should be a little liquid, this is normal.
Pour 1 tbsp on the work surface. l. flour for sawing. Spread the puff pastry on top and roll it out a bit, forming a rectangle.
Roll out the rolled dough into a roll and then divide into 12 equal parts.
Put the dough pieces in a cupcake tin. I have a silicone mold, so I didn't lubricate it, but if you used another one, lubricate the molds with butter or oil. It is necessary to lay out cuts downwards.
Press each form of dough with your fingers, forming a kind of "basket".
Pour the cream into the "basket". I advise you to pour as much as possible, because in the process of cooking the cream will shrink.
Bake the paste da nata in a preheated 180 degree oven for 30 minutes. Then let the dessert cool.
