Recipe: DOBUROKU (Homemade Japanese Sake, Rice wine)
Rice: 500 gram
KOJI Rice (Fermented Rice): 300 gram • 【米麹(米こうじ)の作り方】タッパー1つで手...
Dry yeast: 1 tea spoon
Lemon juice: 1 tea spoon
Cold water (or Mineral water): 1500 gram
0:00 1. Start to make DOBUROKU.
0:15 2. Wash Rice, add water (same level with Rice), cook Rice (hard texture of Rice).
1:30 3. Add cooked Rice and cold water, mix well, getting under 60 degree.
1:55 4. Add KOJI Rice and mix well.
2:15 5. Add Dry yeast and Lemon juice, mix well.
2:40 6. Put the lid with gently (Carbon dioxide will be getting out from container).
2:50 7. Mix well once a day.
3:10 8. DOBUROKU will be making after 4 days.
3:35 9. Try it delicious taste!!
