For the famous Easter Cypriot food ("Paskes") we used:
A1) For their filling we used: a) 750g salted ripe cheese. b) 250g ripe salted halloumi. c) Half a cup of pastry flour 75g. d) 4 medium eggs e) One spoon of sugar 20g. g) 10g mastic h) 1 teaspoon Prunus mahaleb 3 - 4g. i) 250g sourdough.
A2) a) 530g meat b) 150 - 200 ml olive oil c) 1 large onion 300g. d) Salt, pepper and cumin preferably and as much as you want.
B) For the dough we used: a) 1700g rustic flour (the hard, the light yellow). b) 300g strong flour (flour "00", white). c) Half a kilo of sourdough. d) 3 cups lukewarm milk 750 ml. e) 3 medium eggs. (g) approximately 150 ml of seed oil. h) 150g vegetable butter (preferably Spry). i) 2 spoons of sugar 40g. j) 1 teaspoon of Prunus mahaleb 3 -4g k) 1 teaspoon of spice 3 - 4g l) 2 sachets of mastic 10g. m) half a teaspoon of salt 2g. n) 1 sachet of yeast 8g.
