INGREDIENTS for 8 people
For the custard:
whole milk 500 ml
sugar 120 g
corn starch 40 g
egg yolks 4
For the tiramisu:
mascarpone cheese 500 g
ladyfingers 300 g
mocha coffee 300 ml
To serve:
bitter cocoa powder as needed
Pour the milk into a medium-sized saucepan and heat it over a moderate heat until it comes to a boil.
In a separate bowl, mix the egg yolks, sugar and corn starch until you obtain a homogeneous mixture then add about a ladleful of hot milk so as to soften the mixture, then pour everything into the saucepan with the hot milk.
Cook over medium heat, stirring constantly until the right density is obtained.
Remove the cream from the heat and transfer it to a large bowl, mix for a few seconds with a whisk to lower the temperature, then cover the cream with cling film, in contact.
When the cream is cold, add the mascarpone, kept at room temperature, add it ion several goes and mix until a homogeneous mixture is obtained.
Take a baking dish of the right size, soak part of the ladyfingers in the espresso coffee for a few seconds and form a layer, then add a little mascarpone cream and level it evenly, then form another layer of ladyfingers soaked in the coffee and more cream. continue until you finish the ingredients, then transfer the tiramisu to the fridge for a few hours so that it compacts well. Before serving, sprinkle with sifted cocoa powder.
