INGREDIENTS
apples 600 grams

milk 120 grams
sugar 100 grams
baking powder 8 grams
lemon zest 1
lemon juice 1
salt 1 pinch
sunflower seed oil as needed

EXECUTION
In a large bowl place the flour, milk, sugar, eggs, yeast and a pinch of salt then, with an electric mixer, mix all the ingredients until you obtain a smooth and homogeneous batter.
Now peel the apples and cut them into small cubes, place them in a container and sprinkle them with the juice of 1 lemon, to keep them from blackening.
Transfer the apples to the previously prepared mixture, add the grated lemon zest and mix to distribute evenly.
Now bring the seed oil to a temperature of 160-170 °C (320-340 °F) and with the aid of 2 tablespoons drop small portions of dough into the hot oil.
Let fry for about 1-2 minutes until golden brown, fry a few fritters at a time to avoid the risk of excessively lowering the oil temperature.
Drain the fritters on absorbent paper and, while still hot, throw them in a bowl with the sugar and ground cinnamon, mix to cover them completely, then serve.
