At its core, beef stew is some beef, braised in a broth with aromatics and vegetables. It can be thick and hearty, thin and elegant, or something in between. For me, beef stew is the taste of home cooking.

Recipe:
BEEF STEW
Serving 6 to 8
Ingredients
Beef Stew:
2 tbsp vegetable oil
1 kg (2.2 lb) blade roast beef trimmed and cubed (2-3cm)
2 large onion, diced
2 celery stock, diced
4 cups water (or stock)
1 tsp. garlic, granulated
1 tsp. dried thyme
1 tsp. salt
1 tsp. black pepper, ground
6 medium potatoes, quartered
4 large carrots, chopped (2cm)
1 medium rutabaga, peeled, quarter and slice (5-7mm)
Dumplings:
2 cup all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 cup water
Instructions
Beef Stew
1. Preheat vegetable oil in a dutch oven over high heat. Add 2/3 of the meat and brown on all sides. Add the remainder of the meat and cook through; reduce heat to medium.
2. Add onions, celery and sauté until softened.
3. Add stock, garlic, thyme, salt and pepper, bring to a simmer.
4. Layer rutabaga and carrots into the broth. Cover and return to a simmer for 15 minutes.
5. Add potatoes and simmer for 15 minutes.
6. In a medium bowl stir together flour, baking powder and salt. Add water then mix into a soft, wet dough.
7. Adjust seasonings of the beef stew and then drop by spoonfuls onto boiling stew. Cover and simmer 10 minutes without lifting lid. Serve.
Notes
Just half the whole recipe for a small version but it does make great leftovers!
To make parsley dumplings, add 1 tablespoon parsley flakes to the dry ingredients.
