French Onion Soup is one of my favorite soups, hands down....Now French Onion Chicken in the Instant pot may overtake that ranking!
Like many people, I love chicken and I love my Instant Pot, so why not combine three of my favorite things and make some French Onion Chicken in the Instant Pot! This easy comfort food will soon become one of your family's favorite dishes!

Recipe
Ingredients
5 medium yellow onions, cut into quarter inch slices
1 stick of butter
University of Que the Quad All Purpose Rub
1 heaping teaspoon Better than Bouillon beef base
1 ¾ pound to 2 pounds of fresh boneless skinless chicken breasts
4 large slices of Swiss cheese (break each one in half)
2 TBS cornstarch
4 TBS water
Process:
1. Turn your Instant Pot to the saute (more) setting. When the display says HOT add in the butter and swirl it around to melt. Add in the onions and shake some Quad All Purpose Rub on them. Stir the onions every so often for about 4 minutes. Onions will start to turn yellow and release some moisture. Turn off the Instant Pot. Stir the beef base into the pot (no water, just the base).
2. Pound the chicken breasts to ½ inch thick. Season the chicken breasts with Quad All Purpose Rub to taste. Lay them in a single layer on top of the onions.
3. Place the cover on the Instant Pot and secure the lid. Make sure the valve is set to sealed. Set the manual/pressure cook button to 8 minutes. When the time is up let the pot sit for 5 minutes (natural release) and then move the valve to manual release. Remove the lid.
4. Use tongs to place the chicken in a baking dish. Use a slotted spoon to move the onions on top of the chicken.
5. Thicken the sauce in the Instant Pot by making a cornstarch slurry by mixing 4 TBS of Water to 2 TBS of Cornstarch. Pour the mixture into the Instant Pot. Turn your Instant Pot to the sauté setting. The cornstarch mixture will thicken up contents of pot quickly.
6. Turn on your oven’s broiler. Place the slices of Swiss cheese over the top of the chicken and onions and place the pan of chicken under the broiler for about 3 minutes, or until cheese is melted.
7. Serve the French Onion chicken with sauce drizzled over the top. We like to serve it over rice, but Texas Toast works well too.
