50 grams (0.5 cup - 1 tablespoon) of potato starch or cornstarch
90 grams (0.5 cup) of rice flour
10 grams (1 tablespoon) of chickpea flour or other legume flour
* if you don't have legume flour, use 100 g of rice flour
1.5 teaspoon xanthan gum or 3 teaspoon psyllium husk
0.5 teaspoon of salt
* optionally 0.5 teaspoon of baking powder
210 grams of ice cold butter
120 ml of ice water
