A delicious sweet potato pancake recipe!
Start by peeling, cutting, and washing one sweet potato.
Cook until very tender.
Drain and transfer to bowl to cool. For faster cooling place in freezer for 5 minutes.
After potatoes have cooled, mash with fork, add 2 eggs and 1 tablespoon of honey. Mix well.
Heat pan on medium low with 1 tablespoon of cooking oil. Use a measuring cup if you want the pancakes to be consistant in size. I used a 1/3 cup measure.
Cook on medium low for 3-4 minutes and turn to cook another 3-4 minutes on other side.
Top with fruits and nuts of your choice. I had blueberries, strawberries, bananas, and walnuts. Drizzle with maple syrup.
