□ 43g powdered sugar
□ 25g eggs
□ 106g cake flour
□ 15g almond powder
□ 11g unsweetened cocoa powder
□ 1g salt
[ For the Ganache Filling ]
□ 88g dark chocolate
□ 95g heavy cream
□ 12g corn syrup
□ 25g unsalted butter, cut into cubes
□ 5g rum, optional
[ To Decorate ]
□ Strawberry chocolate
□ White compound chocolate
□ Pearl chocolate
• Before you start
- Take your butter and eggs out of the fridge at least 30 minutes before using.
• Notes
- I recommend using a good-quality dark chocolate with cocoa higher than at least 43%.
