Homemade Sourdough Altamura Bread
Altamura bread is very famous in Italy. Also in Turkey, this bread is made with similar methods in the Eastern Black Sea Region. In this video, I showed you how to make beautiful Altamura bread in all details.
1. Starter;
10 gr starter (if you don't have sourdough yet, check out my easy and quick sourdough video; • Video )
10 g of water
10 g flour It will take 5-6 hours (24C) for the starter to be ready.
2. Starter ;
1. Starter (30 g)
50 g of water
50 g flour
Starter will become active in 7-8 hours, depending on the ambient temperature (24).
Dough;
380 g water (put 350 g and increase in a controlled manner)
2. starter (130 g)
500 gr durum wheat flour (semola)
10gr salt
