I like the water trick for the cutting board when tenderizing the meat. I recently made chicken piccata and my chicken kept sticking even with plastic wrap. I will be making pork scaloppini tomorrow ; )

Ho cucinato alcuni funghi tagliati e li ho aggiunti alla salsa. Questa è una buona ricetta; ma suggerisco di avere l'inglese nei sottotitoli invece doppiaggio. È molto distratto, mentre parlo le due lingue.

Definitely overcooked, cooking veal that thin for so many minutes would make it tough. I would do it for 1 minute each side, set the meat aside and make the sauce in the same pan.

ye the technique is a bit off. he didn't even season the veal before dredging it. Pan needed to be hotter to get a quick sear and then I'd remove it and make the sauce, as u said.

Why would you put vegetable broth and not some kind of meat stock?

They probably used veggie stock because it has a lighter taste than chicken or beef stock. You don't want to overpower the flavor of the veal with a heavier flavor stock.

I've worked in restaurants for over 50 years and have always used chicken or veal stock in veal dishes because veal cut that thin does not have much taste.

@@paulzumbo then you are wrong, never too late to learn something. Vegetable broth is much better.
