To make this, you will need:
1/2 cup (120 ml) extra-virgin Greek olive oil, plus more for garnish
1 large red onion chopped
1 large carrot chopped
6 garlic cloves chopped
1 boiling chicken about 3-/2 pounds (1.6 kg), cleaned
4 cups (660 g) chopped canned tomatoes and their juices
1 bay leaf
3 or 4 fresh thyme sprigs
3 or 4 fresh oregano sprigs
4 allspice berries
Salt and freshly ground black pepper
1 tablespoon tomato paste
1 heaping tablespoon Greek honey
1 pound (450 g) Greek hilopites (egg noodles) or other egg noodles
Grated myzithra or other hard sheep's-milk grating cheese for serving
