In part 23 of how to mix and master a song in your home studio I go over mixing with delays.
I like to use delays to add some ambience without washing the source out which can be easy to do when using reverb.
You can use stereo delays, mono delays, ping pong ... it really doesn't matter. A typical trick I like to use to make a guitar that's panned hard left or right sound bigger is to put a delay on it, but pan that delay opposite of the original source to make it sound like it's bouncing off the opposite wall.
I blend to taste and it makes it feel like it was recorded in a bigger space. It adds a lot of character and fills out the mix. You can use this trick on any instrument.
You can through a lead vocal mono delay to the left or right and back. There are no rules.
