Step by Step Shikomi(仕込み Preparation) are explained.
【Ingredients】
For 12 Scallops (preferably fresh)
SALT WATER
●30g Salt
●1 Litre of Water
SOUP STOCK FOR POACHING
●10‐15g Kombu Seaweed
●1 Litre of Water
