Turkey
2 Lb Turkey Breast Tenderloin
8 Oz Ground Breakfast Sausage
8 Oz Mushrooms, Finely Chopped
1/4 tsp Dried Them
1/4 tsp Dried Rosemary
2 1/2 tsp Smoke Stack (or Salt)
1) Lay down a sheet of cling film and add your breakfast sausage. Place another piece of cling on top and flatten into an oval shape about 1/4 inch thick. Let rest in the fridge
2) Take your turkey breast or tenderloin and pound between plastic wrap to 1/2" thickness
3) Place a pan over medium high heat with all of your mushrooms with 1 tsp of salt. Cook for about 5 minutes to get as much water out as possible.
3) Place down a long piece of plastic wrap and lay your turkey breast into the middle of it, overlapping the turkey slightly. Season this side of the turkey 1 tsp of your seasoning.
4) Place down your mushroom mixture into the middle of the turkey and spread as evenly as possible. Top this with your sausage patty.
5) Pick up the plastic wrap halfway to the middle. Remove the plastic from the bacon. Pick up the plastic again to flip the rest of the way over and tuck. Wrap tightly in your plastic wrap and refrigerate for at least 2 hours and up to overnight.
6) Place into an oven at 350°F for 45-55 minutes until an internal temperature of 160°F has been reached. Let rest for 15 minutes. Slice and serve hot.
Deviled Eggs
6 Hard Boiled Eggs
1/4 Cup Sour Cream
3 Tbsp Dill Relish
1/2 tsp Salt
Pinch Black Pepper
Smoke Stack or Paprika (for garnish)
1) Split your eggs in half and separate the yolks into a bowl or blender.
2) Add all of the rest of your ingredients in with your yolks and combine.
3) Either spoon in your mixture or pipe in using a zip lock bag or a piping bag. Top with additional Smoke Stack.
4) Refrigerate for at least one hour.
Pumpkin Spice Custard
1/2 Cup Whole Milk
1/4 Cup Heavy cream
2 Whole Eggs
2 Egg Yolk
2 tsp Pumpkin Pie Spice
1 tsp Vanilla Extract
4 Tbsp Powdered Allulose
1/4 tsp Salt
1) Set up a bain marie by grabbing a baking dish and placing a towel down. Grab 2 5 oz ramekins and grease them up with butter.
2) In a mixing bowl, add in your eggs, milk, cream, pumpkin pie spice, vanilla, allulose, and salt and whisk until homogeneous. Pour up your mixture into your ramekins.
3) Place into an oven set to 350°F for 30-35 minutes or until a toothpick comes out clean when inserted into the middle.
Cajun Dressing
1lb Ground Chicken
6 Oz Ground Pork Rinds
6 Eggs
2 Tsp Baking Powder
1/4 Cup Tallow
2 tsp Cajun Sesoning
1/3 Cup Trinity Vegetable (Onion, Bell Pepper, and Celery)
2 3/4 Cup Chicken Stock (maybe more or less, see steps)
1 tsp Poultry Seasoning
1) Brown your chicken and drain. Add all of it to a blender along with all your pork rinds, eggs, and baking powder. Blend on low for ~1 minute.
2) Using either a small cast iron pan or a loaf pan, add all of your tallow and place the pan into an oven set to 350°F for 15 minutes to get the ghee hot. Once out, carefully spoon in your mixture and spread it evenly.
3) Cook this at 350°F for 40 minutes or until no wet batter remains. Let rest for 20 minutes.
4) Dice up your cornbread and add half of your chicken stock along with all of your seasonings and your veggies Mix and chop this up while tasting the entire time. You're tasting for how much sage you want in the dish and how wet it is. The goal for the texture before it's cooked is soaked bread, not soup.
5) Put this mixture into either a cast iron pan or a cooking vessel of choice and place it into an oven set to 350°F for 30 minutes or until golden brown on top. Serve hot.
Mac and Cheese
1 Lb ground chicken
3 eggs
1 Cup Heavy Cream
6 Slices American Cheese
3 Oz Cheddar Cheese
Salt to Taste
1) In a bowl, add your ground chicken and 2 eggs. Mix with a fork. Place into a zip loc bag for piping.
2) Fill a non-stick pan 3/4 of the wat to the top. Add about 1 tbsp of salt to season the water. Bring this to a simmer.
3) Cut the corner of the ziploc bag and begin piping the mixture into the water.
4) Place a pan over medium heat along with your heavy cream and American Cheese. Mix constantly until whisps of steam start to appear and the cheese melts. Turn the heat off and slowly whisk in your cheddar cheese. Add your noodles and final egg. Fold together.
5) Place into a small baking dish and bake at 350°F for 20 minutes or unti cheese is lightly browned.
