Ikan goreng cili garam is one of the simplest & tastiest dishes commonly found on most Peranakan Chinese dining table. Please remember to cook extra rice whenever this dish is served as it’s so deliciously mouthwatering.
Ingredients:
1. 3 Pieces of thick sliced Spanish mackerels (ikan tenggiri).
2. 10 pieces of fresh red chilli.
3. 10 pieces of shallots.
4. ½ tsp salt.
5. 1 tsp chicken stock granules.
6. 1 cup cooking oil.
Preparations
Fresh Chilli Paste:
• Cut chilli & onions into small pieces.
• Blend both till fine.
Deep-frying fish:
• Season fish with little salt. Rest 2-3 mins.
• Heat up wok with 1 cup of oil.
• Deep fry the pieces till cook.
• Place the pieces of deep fried fish on a plate.
Fried chilli paste:
• Remove ½ of the balance oil and heat up remaining on medium heat.
• Pour in chilli paste, add in salt & chicken stock.
• Stirring off and on till oil appear.
• More oil will appear as the red color chilli paste slowly changes to darker color.
• Once the chilli paste turn to darker color, just stir for 1-2 mins, then remove & serve on the fish.
