Curry from curry powder, it’s so fragrant and nice!

I saw some curry powder in the Asian market near me, called My Hoa in Mobile. 20 bucks for a tin can of it, and had it in my hand. Bought me a bottle of 3 crabs, some premium pearl river bridge light soy sauce, some Chinese cooking wine, and a big ass bottle of lee kum kee oyster sauce. Seen a Rest next door Pot Au Pho. That's next on my list to try.

A note for anyone wanting a thicker curry: The darker the color of the roux, the more pronounced the roux’s flavor however at the same time that a roux darkens, its thickening power lessens. So to put it simply, if you want it to thicken more make a quick roux that is light in color, just enough to remove the uncooked flour taste and then add it to the broth and mix, if you want it lighter in viscosity, a darker color will achieve that or less roux in general, personally I like my curry thick instead of runny. You can also of course, simply add more roux to thicken it further, I also like to use butter for the roux as it impairs more flavour IMO, if you're going full vegan then any vegetable oil will do, including olive but that might be too strong of a flavour so stick with neutral ones, they'll all do the same job.

Hi bonkers! Yes, you can use curry roux. It's easy and nice, but curry powder is much more fragrant!

Curry roux (which I love) contains oils that are unethically sourced, as well as a variety of additives- preservatives, salt, sugar, color. It’s more heavily processed. Maybe you just can’t find it, or you want it thinner with more flavor. Maybe you’re trying to cut back on non recyclable waste, or overly processed foods. It’s also just nice to know how to make things from scratch, they often taste better anyway. It’s like asking why you make tomato sauce for pasta or pizza if you can buy the jars at the store. Hope this helps. ❤

And the DIY roux is tedious to make and the color is pale. 😂 Pre-made cubes still the best.

I made this curry. I added a little less water, and it came out tasting beautiful. It reminds me a little of the chinese curries I used to buy in the 60s and 70s. I added a few peas too, just like in those 60s/ 70s curries.
