Colorful and tasty! I had frequently the head of a fish on a buffet in Japan as a decorative asset, in case of the clown fish the skin would make any sashimi an eye catcher!

A kinda agree. Clown triggers are some of the most popular aquarium fish along with yellow tang and clowns. I never knew triggers were even edible. I always though they where poisonous like the lion fish. 🤔

because generally sashimi and pieces of fish for sushi should be chopped carefully into thin slices. You don't wear gloves so you could feel the thickness of fish piece and the direction of knife. I worked in Asian restaurant so know by myself ;)

LOL. The glove thing is a joke. Plastic gloves get just as filthy as bear hands. You're better off washing your hands every few minutes when handling food as opposed to wearing plastic gloves all day.

i doubt this is in Okinawa Japan. First of all background noise is in Chinese. Second, in Japan, those who handle and cut fish do not have that disgusting nails and wear jewelry while cutting the fish. The guy that is cutting the fish is chinese. Finally in Japan they do not use dull and shittty looking knife, they take pride in knife making and that knife is also chinese cheaply made knife.
