I've eaten this fish many times before and caught some in my time. In Florida we call this a pompano, a species that puts up a good fight and is good eating once you get it home. I never thought of eating it as sashimi before now because I always ate it cooked, until now.

Pomfret is one of my fave fishes and I believe grilling or pan-frying is the best way to get its true flavor and not eaten raw like sashimi. Plus there is a lot of sinew ingrained in the flesh so this will be chew AF to eat. You’re also missing out eating the flesh from the head if you don’t cook it! The best flavor is all right there.
