Dhindo (Nepali: ढिँडो) is a meal prepared in Nepal. It is prepared by bringing hot water in a pan to boil and adding flour while continuously stirring the mix. It is the main meal in various parts of Nepal.
Dhindo is traditionally prepared from buckwheat or millet but wheat, corn flour is common as well. In fact, one could make Dhindo from any grain as long as its ground into flour as the recipe is simple. The utensil of choice is "Phalame Tapke" (Iron pan). A narrow iron spatula is used to stir the thick mix and is called, "Dabilo" (दाबिलो). It makes stirring easier.
Gundruk (Nepali: गुन्द्रुक, (Pickled Leafy Vegetables)) is fermented leafy green vegetable and is a popular food in Nepal and claimed to be one of the national dishes. It is popular not only in Nepal but also in every Gorkhali or Nepalese diasporahousehold worldwide.The annual production of gundruk in Nepal is estimated at 2,000 tons and most of the production is carried out at the household level. Gundruk is obtained from the fermentation of leafy vegetables (saag; Nepali: साग). It is served as a side dish with the main meal and is also used as an appetizer. Gundruk is an important source of minerals particularly during the off-season when the diet consists of mostly starchy tubers and maize which tend to be low in minerals
There is much curiosity among people, mostly youngsters residing abroad about cooking dhindo and gundruk in typical nepali style essentially tasting like the one prepared by mothers/ sisters etc back home.
Hoping this video will of great help to those who are missing the essence of dhindo and gundruk prepared by Nepali mothers/grandmothers. You can even have it with khasi ko masu ko gravy, which goes really well with dhindo.

Ingredients सामाग्रीहरु
For Dhindo
500 ml water
250 grams of flour (as per your choice : buckwheat(fapar), millet(kodo), corn flour(makai ko pitho) or just wheat)
For Gundruk
1 cup Gundruk
1/4 cup Soybeans
4 potatoes
3 green chilli
2 tsp Garlic/ Ginger paste
3 medium size chopped tomatoes
1/2 tsp Turmeric powder
1 tsp Coriander and Cumin powder
Sunflower Oil (or any vegetable oil)
Salt to taste
3 tbsp rice/wheat flour (for thickness)
