To make Khatte Baingan, you'll need:
Ingredients:
- 500g small eggplants
- 2 tablespoon oil
- 1 tablespoon ginger-garlic paste
- 1/2 inch tamarind pulp
1tablespoon red chilli powder
- 1 teaspoon turmeric powder
1tbsp coconut
some ground nuts
1 tbs tamoto paste
curry leaves 8- 10
onion 2 chopped half onion for fry
2 tomato chopped
saseme seeds 1 tsp
coriander powder 1 tbsp
coriander seeds cumin seeds 1tsp
garam masala 1 tsp
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
1. Wash and slit the eggplants without cutting them into halves.
make all above ingredient into paste and mix all together and fill the masala in the slit of Baigan
2. Heat oil in a pan,
3. Add onion / jeera curry leaves/MASALAand sauté until the raw smell disappears.
4. Mix red chili powder, turmeric powder, and salt. Cook the mixture for a few minutes.
5. Add the slit eggplants to the pan,. Cook covered until the eggplants are tender.
6. Garnish with fresh coriander leaves.
7. Serve Khatte Baingan with rice or Indian bread.
