INGREDIENTS:
For Veggies:
* Cauliflower(फूलगोभी) - 1 Nos
* Carrot(गाजर) - 2 Nos
* Round Melon/Apple Gourd/Tinda(टिंडे) - 4-5 Nos
* Taro Root/Arbi(अरबी) - 4-5 Nos
* Lady Finger(भिन्डी) - 250 Gram
* Potato(आलू) - 3-4 Nos
* Bitter Gourd(करेला) - 3-4 Nos
* Eggplant/Brinjal(बैंगन) - 3-4 Nos
* Green Chilli(हरी मिर्च) - 4-5 Nos
* Onion(प्याज) - 5-6 Nos
* Oil(तेल) - For frying
For Sabji Masala:
* Coriander Powder(धनिया पाउडर) - 3 Spoon
* Turmeric Powder(हल्दी पाउडर) - 1 Spoon
* Carom Seeds(अजवाइन) - 1/2 Spoon
* Asafoetida/Hing Powder(हींग पाउडर) - 1/4 Tsp
* Crushed Fennel Seeds(कुटी हुई सौंफ) - 3 Spoon
* Black Pepper Powder(काली मिर्च पाउडर) - 1 Spoon
* Garam Masala(गरम मसाला) - 1 Spoon
* Roasted Cumin Powder(भुना जीरा पाउडर) - 1 Spoon
* Chat Masala(चाट मसाला) - 2 Spoon
* Crushed Red Chili Powder(कुटी हुई लाल मिर्च) - 1 Tsp
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) - 1 Spoon
* Black Salt(काला नमक) - 1 Spoon
* Salt(नमक) - 1 Spoon
For Gravy:
* Oil(तेल) - 2 Spoon
* Cumin Seeds(जीरा) - 1 Tsp
* Onion(प्याज) - 2, Big
* Ginger, Garlic, Green Chilli Paste(अदरक, लहसुन, हरी मिर्च पेस्ट) - 1-2 Spoon
* Sabji Masala(सब्जी मसाला) - Some
* Kashmiri Red Chili Powder(कश्मीरी लाल मिर्च पाउडर) - 1 Spoon
* Turmeric Powder(हल्दी पाउडर) - 1/2 Spoon
* Coriander Powder(धनिया पाउडर) - 1 Spoon
* Salt(नमक) - As per taste
* Tomato Puree(टमाटर) - 2-3
* Water(पानी) - As required
* Bhujiya Sev(भुजिया सेव) - 1/4 Bowl
* Whisked Curd(फेंटा हुआ दही) - 1/2 Bowl
* Fenugreek Leaves(कसूरी मेथी) - 1 Tbsp
* Sugar(चीनी) 1/2 Tsp
* Water(पानी) - As required
* Butter(मक्खन) - As per taste
* Coriander Leaves(धनिया पत्ती)
RECIPE:
For Veggies, take some bitter gourds, chop their ends and peel while scratching them using a peeler. Cut them from the center, open them, apply some salt over them, keep them aside for 15 to 20 minutes, & then wash them. Peel some Arbi & Potato & then chop them into two halves. Take some Brinjal/Eggplant, Lady Finger chops them into two halves. Keep the pan on the flame, put some Oil & fry all the varieties of veggies individually on high flame till the veggies have fried and become crispy & then take them out.
For Sabji Masala, take a mixer jar & put Coriander Powder, Turmeric Powder, Carom Seeds, Asafoetida/Hing Powder, Crushed Fennel Seeds, Black Pepper Powder, Garam Masala, Roasted Cumin Powder, Chat Masala, Crushed Red Chili Powder, Kashmiri Red Chili Powder, Black Salt & some Plain Salt in it. Grind it & take it out on a plate. Put the Masala on fried Veggies & mix well.
For Gravy, keep the Bhaji Tawa on the flame, put the Oil, Cumin Seeds, finely chopped Onion, Ginger, Garlic, and Green Chilli Paste & saute them well. Then put some spices like Sabji Masala, Kashmiri Red Chilli Powder, Turmeric Powder, Coriander Powder & Salt to taste. Then put Tomato Puree, some Water, Bhujiya Sev, Whisked Curd, Fenugreek Leaves, Sugar & add some water if required & mash all with the masher. Cook them until oil separates from them. Then make a hole in the center of gravy & put some water in it & mix well. At last, arrange the cooked veggies on it. Then Pour some butter & Coriander Leaves into the pan & mix well. fry some ladyfingers & sprinkle some water on them. Stir to fry for a while and later on, serve it. Serve all the veggies likewise. In this way, Shadi Style Tawa Bhaji will get ready at home.
