LEMON QUICK BREAD
1/4 cup fresh lemon juice
3/4 cup Plain Greek yogurt
1 teaspoon lemon zest
2 cups all purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
6 Tablespoons salted butter, room temp & soft
1 cup granulated sugar
2 large eggs
GLAZE
1/4 cup fresh lemon juice
1/2 cup sugar
LETS MAKE IT -
Preheat oven to 350. Spray a loaf pan with non stick spray, set aside.
In a small bowl combine the lemon juice, Greek yogurt and lemon zest, set aside.
In a bowl, combine the flour, baking powder & salt. Set aside.
In a medium size bowl, cream the butter and sugar. Add the eggs ONE AT A TIME until completely combined with the butter. Add half of the flour and yogurt mixture, beat till just combined. Add the remaining flour and yogurt mixture, mix till just combined. Pour into the prepared loaf pan. Bake for 49-50 minutes or until a toothpick inserted in the middle comes out clean.
GLAZE - In a small bowl, mix the lemon juice and sugar, stir to combine and stir several times while your bread is baking. Set aside.
Remove bread from oven. Using a fork or skewer, make holes all over the top of the loaf. Spoon the glaze on the bread slowly, allowing it to get into some of the holes. Let cool for 15- 20 minutes and remove from pan and transfer to a serving plate. Serve with a cup of Farm Stand Blend coffee and enjoy! ☕️
