I wonder what's wrong with me Paula. My adult kids, family members, friends, neighbors, EVERYONE loves cornbread. I can't STAND the taste of it and I don't know why. If I even smell it cooking, my stomach turns. I wish SO BADLY that I could love it. I've tried so many different types and just can't get a taste for it. I LOVE corn, could eat it every day, yet cornbread just doesn't work for me. I love corn tortillas, creamed corn, any corn, but cornbread is a no go. Makes me mad that everyone around me enjoys it but I can't. 😞

Nothing like a freshly made pan of cornbread right out of the oven, slathered with butter melting all over it. This is a great classic cornbread. I think I was about 10 when my mother gave me the job of making cornbread. I began making it by using a recipe, measuring cups and measuring spoons. I carefully measured each ingredient and placed them in a bowl then mixed it up before pouring into the pan that was heating up in the oven. I felt honored to be given this task with my mother passing on this responsibility. After a short time I was able to go to the kitchen and gather the mixing bowl and all of the ingredients and make cornbread without any measuring cups or spoons. Basically I just eyed everything and the more I played with the recipe, the more I made it my own. This was like a right of passage, being given the responsibility of making part of our family's meal. Perhaps this is when my love for cooking began. Years later I was visiting my grandmother, which I loved because we always cooked together. We found a recipe for what you know as corn casserole. Finding this recipe was a game changer. The addition of creamed corn, green chilies, sour cream and cheese put our cornbread over the top. Decades later I still love and make this and have introduced it to a lot of people. This is one of my favorite ways to make cornbread. Another way I like it is to add a small can of creamed corn the fry patties in a skillet. Thanks for this simple recipe that took me down memory lane. These are the little things we remember, cooking for and with our loved ones. Creating memories of time spent together that brought a closeness we will always cherish.

Hi Miss Paula! My grandmother always made cornbread for me and hers always had that black almost burnt crunchy bottom that was my favorite part! But the middle was still just right. I can only get it like that when I use her old skillet that’s thinner metal. Anyway, when I make cornbread for dressing I love to add in my dressing spices like sage and rosemary or whatever, into it beforehand. It makes it so savory! Also sometimes I get my skillet really hot on top of the stove and pour my batter in it and let it cook there a minute until I see a few little bubbles (like pancakes) before I put it in the hot oven. It’s good any way you make it. My grandmother and I ate cornbread in a glass of milk as a snack if it got stale! She grew up in the depression and never wasted anything 😄

Fast forward ⏩ my kids to this day like what they call corny cornbread. I just add a can of cream corn to the mix. And they love it. Ok Mrs. Paula, I live in a country community and instead of macaroni and cheese pie, I grew up eating a cracker cheese pie. The way my mother and grandmother made it was using saltine crackers in place of the macaroni. If you use a 13x9 dish, I use about 1 &1/2 to 2 sleeves of saltines for the bottom layer, these sharp cheese, another layer of the same amount of saltines and then another layer of cheese. And to me, you can't us enough cheese, so cheese it up to your taste the same you would with the mac and cheese pie. Then I mix up about 2 eggs with milk, salt and pepper. I start with two cups of milk, but that is never enough. But I pour the milk mixture evenly over the cheese and crackers. If you don't see the milk mixture close to the top, just pour in milk until you start seeing the milk. I place butter pieces on top and then place it in the oven. I always start with a cold oven, but it doesn't really matter I guess. But bake in a 350 oven until it starts browning and it will rise some. If you have never tried this, I would LOVE for you to do so. And if you really want that buttery flavor, instead of using saltines, use those butter flavored crackers and that just makes it better! Love ya and one day i want to be you Mrs. Paula! People have called me you once or twice because I was raised to cook like you. Hard to give measurements, but just cook it up! And my grandma's pound cake is always a winner! I hope your eyes are better and I pray you and yours are well! Lisa K. Lever leverlisa@gmail.com

I put honey instead of sugar. In Appalachian North Carolina a lot of people do this, or a little sorghum syrup. Not as much as people put sugar in there - just a scant teaspoon. I guess Appalachians use honey or sorghum because we did not historically grow sugar cane in the mountains. It gives an incredible flavor! Also, I put about half a stick of butter for a small cast-iron skillet's worth (1 cup cornmeal, 1 cup flour, etc.) I know Paula will approve! I swirl the pan to coat so we get that crust, pour the butter in the batter, stir and pour back in the pan to bake.

My family loves grated squash or zucchini with finely chopped onion in the corn bread batter. It comes out moist and tastes like a fritter, but in a slab of cornbread. When the kids were little, we cooked broccoli and mixed it in the cornbread batter and they ate broccoli....and loved it. When my hair was frosted, my kids use to call me "Paula Deen" because I always used a lot of butter.

Ever heard of adding sliced green olives not the sweet cornbread but a more savory cornbread? Love your recipe though. Reminds me of how my mom made it. She was from Mississippi.

"There's more than one way to skin a cat." That's a catfish reference, so your furry family members are safe. This has been a public service announcement.

To set the record straight, I'm not a big fan of cooking where critters climb or slobber. That being said, there is only one way to skin an actual cat. Like a squirrel, only bigger.

I'm going to have to try this. But how much flour and cornmeal did you use in this recipe. I like about 2 Tbl. of jalapenos added sometimes too.

I have been wanting cornbread and this recipe looks easy. I'll definitely try it. A restaurant here used to put broccoli in their cornbread and it was delicious.
