Ingredients:
- Basmati rice
- Meat (chicken/mutton)
- Yogurt
- Saffron
- Spices (bay leaves, cloves, cardamom, cinnamon, etc.)
- Fresh herbs (mint, coriander)
- Ghee
- Onions
- Garlic and ginger paste
Instructions:
1. Marinate the meat with yogurt and spices.
2. Cook the rice with aromatic whole spices.
3. Layer the marinated meat and partially cooked rice.
4. Add saffron-infused milk, fried onions, and fresh herbs.
5. Seal the pot and cook on low heat (dum) until the meat is tender and the flavors are well absorbed.
Mint raita is a refreshing and flavorful yogurt-based side dish made with fresh mint leaves. It is often served as an accompaniment to Indian meals, especially those that are spicy, as it helps to cool the palate. Here's a simple recipe for mint raita:
Ingredients:
- 1 cup yogurt (preferably thick)
- 1/4 cup fresh mint leaves, finely chopped
- 1/4 cup fresh cilantro leaves, finely chopped (optional)
- 1 small cucumber, grated or finely chopped
- 1 small green chili, finely chopped (optional)
- 1/2 teaspoon roasted cumin powder
- Salt to taste
- A pinch of black salt (optional)
- A pinch of chaat masala (optional)
Instructions:
1. *Prepare the Yogurt*: Whisk the yogurt in a bowl until smooth and creamy.
2. *Add Mint and Other Ingredients*: Add the finely chopped mint leaves, cilantro leaves (if using), grated cucumber, and green chili to the yogurt.
3. *Season*: Add roasted cumin powder, salt, black salt, and chaat masala. Mix well to combine all the ingredients.
4. *Chill*: Refrigerate the raita for at least 30 minutes before serving to allow the flavors to meld and to serve it chilled.
5. *Serve*: Garnish with a few mint leaves on top and a sprinkle of roasted cumin powder or chaat masala before serving.
