It’s bagel time!
This week I was craving bagels so I decided to take my best shot at making New York-Style bagels which I think pass the New York Style Bagel Test if I do say so myself!

🍞 Ingredients
6 1/2 cups flour
4 tsp. Brown sugar
4 tsp. Sugar
3 tsp. Salt
2 tsp. Yeast
2 cups water
🗺 Directions
In a stand mixer fitted with the dough hook, combine the flour, brown sugar, sugar, salt, yeast, and water. Mix on a low-medium speed. When everything is combined, either continue mixing in the stand mixer for 10 minutes, or transfer to a working surface and knead by hand for 15 minutes.
Divide the dough into even balls, cover and let rise for 1 hour, or until the dough doubles in size.
Using your finger, poke a whole in each ball of dough and give it a bagel shape.
Over medium heat, bring a pot of water to a boil and as it begins to simmer, add ½ cup of brown sugar. Working in batches, gently place the bagel into the water and boil for 1-2 minutes on each side.
Remove from the water and place on a baking sheet lined with parchment paper. It is at this point htta you can add any toppings you like. I used everything bagel seasoning, grated mozzarella cheese, sesame seeds, and I even left some plain.
Bake at 450°F for 15 minutes, let cool and enjoy!

🌟 Review and Tips
When poking the holes in the dough, continue to keep the dough covered to keep it warm and prevent it from drying out.
I made a blueberry cream cheese, which was ok but I could have done without it. Doesn’t mean that you can’t experiment with other flavours!
