It's worse... I spent like $5K on food processing equipment past year... If I ever get my own house, it will be probably even worse...

Fascinating stuff. I think I would create other noodles that lend themselves better to a DIY process, for example "Tagliatelle" (Bandnudeln).

You can hire some people, even older one, train them how to use your tools and make a commercial production of this pasta :D

Why you don't try to use stepper motor instead of noisy motor with reduction for the mixer?

That would be quite big stepper :D The motor is not loud, the pulleys are though. Plan is to make new software for mread making machine and use that instead, so that can free a bit more time. I am starting to get limited by water evaporating, so next logical step would be full automation lol. I need a warehouse.
