Ingredients:
1 Rip mango
1/2 cup sugar
1 cup semolina (rava)
2 tsp raisins
1 tsp all-purpose flour
1 cup milk
1/2 cup oil or butter
1 tsp vanilla essence
1 pinch of salt
1/4 cup milk
1+1/2 tsp baking powder
1 pinch of baking soda
Any broken nuts for topping
Instructions:
1. Prepare Mango Pulp:
Cut a large mango into pieces and place them in a blender.
Add 1/2 cup of sugar and blend until smooth. Set aside.
2. Prepare Semolina:
Grind 1 cup of semolina (rava) into a fine powder. Set aside.
3. Coat Raisins:
Combine 2 tsp of raisins with 1 tsp of all-purpose flour. Set aside.
4. Mix Wet Ingredients:
In a mixing bowl, add the prepared mango pulp and 1 cup of milk. Whisk well.
Add 1/4 cup of oil or butter, 1 tsp of vanilla essence, and stir well.
5. Combine with Dry Ingredients:
Add the powdered semolina, a pinch of salt, and mix thoroughly.
Let the mixture rest for 10 minutes to allow the semolina to absorb the liquids.
6. Prepare Cake Batter:
After 10 minutes, add 1/4 cup of milk, 1+1/2 tsp baking powder, and a pinch of baking soda. Mix well.
Add the coated raisins and mix thoroughly. The cake batter is now ready.
7. Prepare Baking Tray:
Pour the cake batter into a prepared baking tray.
Tap the tray 2 to 3 times to remove any air bubbles.
Top with your choice of broken nuts.
8. Bake the Cake:
Preheat the oven to 200°C for 10 minutes.
Transfer the baking tray to the preheated oven.
Bake at 180°C for 30 minutes.
9. Cool and Serve:
Allow the cake to cool completely before serving.
