CHILLI CHICKEN RECIPE
INGREDIENTS:
750g of boneless chicken
Salt to taste
1-2 tsp of vinegar
3 tsp of soy sauce
1-1.5 tbsp of red chilly paste
1 tsp of pepper powder
6 tbsp of cornstarch
1 egg
6-7 tbsp of oil
2 tbsp of finely chopped garlic
1 tbsp of ginger
Red chillies 4-5 roughly chopped
1 tbsp finely chopped coriander stems
2 tbsp of red chilli paste
1 cup water
1 tbsp of pepper powder
1 onion
1 green capsicum cubed
2 tsp of sugar
3-4 fresh green chillies slit
1 cup of freshly chopped spring onion greens
2 bulbs of spring onions
1 tbsp of coriander chopped
METHOD
Take 750g of boneless chicken
Add 1.5 tsp of salt
Add 1-2 tsp of vinegar
2 tsp of soy sauce
Add 1-1.5 tbsp of red chilly paste
1 tsp of pepper powder
Add 3 tbsp of cornstarch
Mix well
Crack an egg in it
Rest the chicken for at least 30 minutes
Heat 3-4 tbsp of oil for frying
Deep Fry 5-6 pieces at a time
Prepare Chilli powder paste by taking 3-4 tbsp of red chilli powder and adding little water to it.
Heat a wok (kadhai)
Heat 2-3 tbsp of oil
Add 2 tbsp of finely chopped garlic
Add 1 tbsp of ginger
Fry these for a min
Add red chillies 4-5 roughly chopped
Add finely chopped coriander stems 1 tbsp
Stir continuously
Add 2 tbsp of red chilli paste
Fry it for a minute or two
Add half a cup water
Add 1 tbsp of soy sauce
1 tbsp of pepper powder
Add 1 onion petle cut into chunks
1 green capsicum cubed
2 tsp of sugar
Add half cup of water again
Add little salt to taste
Add the fried chicken
Stir well
Add 3-4 fresh green chillies slit
3 tbsp of corn starch slurry
Add 1 cup of freshly chopped spring onion greens and 2 bulbs of spring onions
Add 1 tbsp of coriander chopped
Stir well
Serve as a starter or with fried rice
