A good recipe. Some cooking time can be saved by frying (tumis) all the spice paste (rempah) at once, then removing approximately half for the gravy to a separate pot. The remainder in the wok can be used for the rice vermicelli, while at the same time the separate paste in the pot can be simmered for the gravy.

Dpt aku rasakan waktu sklh awal 80an di eunos primary school perhhh mee hoon taucu ikat tepi dgn harga 80sen dia punya sdp ya Allah btl btl ada rasa ..tpi trang aku kata masakan Melayu singapura memang masakan mak kita bermacam aneka lauk pauk smpi skrg ingin aku kembalikan🤗 sejarah tpi apa kan daya hajat nk ke sana lgi sdh tiada ingin aku mencubanya sndri trksh kak👍👍

I believe your recipe is the closest to the one i loved the most, growing up, the one i ate every day at Secondary school. I hope some day to eat a similar mee siam when i come back to Singapore for a visit.

Tauco is fermented soy beans. They usually come moist in a jar, and many of the beans are still whole. The not confuse them with Japanese natto.

If it's seafood that is problematic, there's a possibility of using "vegetarian belacan" made from soy, yeast extract, spices etc. It's not an exact match for shrimp paste, but might be a more acceptable flavour. Belacan is very strong in flavour and quite off-putting when raw, but once it's cooked, its smell diminishes greatly, leaving behind an exotic note that adds excitement and authenticity to Malaysian dishes. Plus, before this trend of "umami" this and that was touted, belacan was there to add a super umami-kick to many of our local dishes... without MSG either.
