Mutton Mangala
(Serves 4-5)
Ingredients:
6 dry chilies (as rq)
1 tbsp coriander seeds
1 tbsp cumin
3 cinnamon sticks
8 cloves
5 cardamom
1/2 tsp turmeric powder
1 cup coconut
1/2 cup water
5-6 tbsp oil
3 big onion sliced
1 tbsp ginger garlic paste
200g tomato
1 kg of meat
1 tsp salt (as rq)
1 cup water
2 cups of water (as rq)
1/4 cup coriander leaves
1-2 tbsp ghee
1 tbsp chopped curry leaves
Procedure:
1- Prepare 6 dry chilies (as rq), 1 tbsp coriander seeds, 1 tbsp cumin, 3 cinnamon sticks, 8 cloves, and 5 cardamom. Transfer to a mixie and add 1/2 tsp turmeric powder. Crush. Add water (as rq) and blend into a fine paste. Remove and keep it aside.
2- Add 1 cup coconut and crush. Then, add 1/2 cup water and blend into a fine paste.
3- In a cooker, add 5-6 tbsp oil and add 3 big onion sliced. Fry until it becomes soft.
4- Add 1 tbsp ginger garlic paste. Fry well.
5- Add 200g tomato sliced and add a little water. Fry till it becomes soft.
6- Add 1 kg of meat. Fry on high flame.
7- Add 1 tsp salt (as rq) and blended spice paste. Mix.
8- Add 1 cup water and mix.
9- Cover and cook for 4-5 whistles or until done. Mix a little.
10- Add coconut paste and mix. Add 2 cups of water (as rq) and mix. Cover and cook until it boils.
11- Add 1/4 cup coriander leaves and mix. Cover and cook for 2-3 mins.
12- In a pan, add 1-2 tbsp ghee and 1 tbsp chopped curry leaves. Then, mix it in the curry. Serve hot & enjoy!
