Sweet Potato Payasam
(Serves 10-12)
Ingredients:
600g sweet potato (Indian sweet potatoes are better)
1/2 tsp salt (as rq)
1/2 cup sago seeds
4 tbsp ghee
10 chopped cashews
1 tbsp dry grapes
3/4 to 1 cup coconut
4 cups (1L) of milk
350g jaggery (as rq)
1/4 tsp salt (as rq)
1 tsp cardamom powder
1 tbsp ghee
Water
Procedure:
1- In a pot, add 600g sweet potato (Indian sweet potatoes are better), 1/2 tsp salt (as rq), and 1 cup water. Cover and cook until it is soft. Remove the skin and grate it.
2- Wash and soak 1/2 cup sago seeds with 1/2 cup water for 1 hour. Then, cook it with 1-2 glass of water and keep it aside.
3- In a pot, add 4 tbsp ghee and 10 chopped cashews. Fry. Add 1 tbsp dry grapes. Fry. Remove and keep it aside.
4- Add grated sweet potato and 3/4 to 1 cup coconut. Fry well.
5- Add 4 cups (1L) of milk and 350g jaggery (as rq). Mix. Cover and cook until it boils. Mix a little.
6- Add cooked sago seeds and mix. Add 1/4 tsp salt (as rq) and add water/milk to adjust the consistency if needed. Mix. Cover and cook for 2-3 mins.
7- Add 1 tsp cardamom powder, 1 tbsp ghee, and fried cashews and grapes. Mix. Cover and cook till it boils well. It's done!
