What you’ll need:
Lava Cake Batter
150g Dark chocolate 65%
150g Unsalted Butter65g Sugar/Dark Palm sugar
3 Eggs
3 Yolk
40g Plain flour
Pinch of Salt
Ganache Centre
150g Dark chocolate 65%
50g Milk
100g Cream
25g Unsalted Butter
Baked at 165C, 18-20mins
Italian Meringue
90g Egg whites
180g Sugar
50g Water
118C
Equipment:
7cm metal ring mould
4cm cylinder silicon mould (optional)
Thermometer
Freeze Dried Mandarins from - Fresh As
Silicon mould from Pavoni
*I highly suggest that if you're not using a silicon mould for the centre to make the ganache a day before to set overnight.
