This is not your regular breakfast omelette you make at home or you get at a hotel or cafe. This is an Asian style crispy fried omelette made from eggs and flour. It is a common street food available in Malaysia, Singapore and Thailand. I guess probably in other parts of Southeast Asian countries. I can't be sure. I think it would have originated from China or Taiwan, created by our Chinese ancestors when they emigrated to our countries, and reinvented over time to suit our local tastes. In Penang, and other parts of Malaysia and Singapore, it is available as a street food called "oh chien". In English, it is known as "oyster omelette" or "fried oyster omelette". I created my own "oh chien" home recipe. I used prawns, not oysters, and make it into a "fried prawn omelette". I call it "heh chien". The inspiration comes from Penang "oh chien". The idea of using bean sprouts come from the Thai street food version. I hope you like this recipe as much as I do.
