In my column "Max makes sandwiches", I have always tried to elevate the sandwich to an art form, and today's sandwich is a perfect example of how a sandwich can become a gourmet dish. Today's star is the pork neck, a flavor-packed cut that I cook to perfection until it's irresistibly crispy while still leaving it juicy and tender.

For this reason, I added Scapece courgettes, slightly acidic and crunchy, which go perfectly with the softness of the meat. And to tie it all together? As always, I don't forget a touch of class when serving my dishes: a glass of Apulian white wine from the Varvaglione cellars, which with its freshness and fruity notes is the ideal companion for this rich and tasty sandwich. It is proof that even a gourmet stuffed sandwich can be worthy of a refined and flavorful meal.
