Ingredients:
🥄 500g cottage cheese
🥄 100g semolina
🥄 2 eggs
🥄 4 tablespoons of sugar or powdered sugar (optional)
🥄 1 teaspoon vanilla extract
🥄 1 teaspoon salt
🥄 Frying oil or Ghee butter
🥄 Powdered sugar for sprinkling (optional)
🥄Fruit dessert and cream or whipped cream to serve
Instructions:
👩🍳 In a large bowl, mix 500g of cottage cheese with 2 eggs, 1 teaspoon of vanilla extract and 1 teaspoon of salt, 4 tablespoons of sugar or powdered sugar until you get a homogeneous composition.
👩🍳 Gradually add 100g of semolina and mix well until the composition becomes consistent.
👩🍳 Let the composition rest for a few minutes. This allows the semolina to hydrate and absorb excess moisture from the composition, which contributes to a better texture and even baking of the papanas.
👩🍳After they have rested, we begin to form the papans.
👩🍳Take a portion of the composition, about the size of a large spoon or a full hand, and shape it into a round ball between your palms.
👩🍳In a tray, sprinkle a little flour to form papanschi and prevent them from sticking.
👩🍳Drop the papansi in flour to coat them evenly before shaping them
👩🍳Place the ball of composition on a clean surface and press gently to form a thick, round disc.
👩🍳You can use a glass with a smooth and round edge to shape the papanas. Place the composition disc on a flat surface and use the edge of the glass to press into the center, forming a round hollow. You can rotate the glass slightly around the center to achieve an even shape.
👩🍳 Gently lift the formed papanas and place it on a plate or tray lined with baking paper.
👩🍳 Heat the oil in a deep pan or frying pan.
👩🍳 Fry the papanas in the hot oil until they become golden and crispy on both sides or put them in a preheated oven at 140°C for about 15 minutes to make them fluffy and airy.
👩🍳 Take them out on a napkin to absorb excess oil.
👩🍳 If you wish, sprinkle the warm papanas with powdered sugar before serving.
👩🍳 Serve them with fruit jam and cream or whipped cream.
