Instructions:
🔥 Preheat the oven to 180°C.
Preparing the strawberries:
🍓 Wash the strawberries well and let them soak for 15 minutes in a water solution with sodium bicarbonate (1 liter of water with 1 teaspoon of bicarbonate).
🍓 Rinse the strawberries with clean water and let them dry.
Preparation of the dough:
🥣 In a large bowl, mix flour (200 g) with sugar (1 tablespoon), cold butter (100 g) and salt (a pinch of knife).
🧈 Rub the ingredients between your fingers until you get a crumbly texture.
🥛 Add the cream (100 g) and knead the dough until it becomes homogeneous.
📦 Wrap the dough in plastic wrap and leave it in the refrigerator for at least 30 minutes.
Preparation of the filling:
🧀 In a bowl, mix the cottage cheese (150 g), the yolk (1 piece), sugar (2 tablespoons) and vanilla sugar (1 teaspoon).
🥚 Mix well until you get a uniform composition.
Assembling the bucket:
🍥 Remove the dough from the refrigerator and spread it on a sheet of parchment sprinkled with a little flour, until you get a thickness of about 3-4 mm.
🧀 Put the cheese filling in the center of the dough and distribute it evenly, leaving a 3-4 cm border.
🍓 Cut the strawberries (400 g) into halves or quarters, depending on the size, and place them on top of the cheese filling.
Completion:
🥟 Wrap the edges of the dough over the filling, forming a rustic bucket.
🍬 Sprinkle brown sugar (1 tablespoon) over the strawberries.
🥚 Brush the edges of the dough with yolk or egg white (1 piece) to get a golden crust.
Baking:
🔥 Transfer the cake with parchment paper to a baking tray and bake for 35-40 minutes, or until the dough is golden and the filling is well set.
