Ingredients:

🍪 Digestive biscuits: 400 gr
🧈 Melted butter: 150 gr
Cream:
🧀 Cream cheese: 600 gr
🥛 Whipped cream 30%: 500 gr
🍚 Powdered sugar: 150 gr
💧 Water: 100 ml
🥛 Hot milk: 100 ml
🍮 Gelatin: 20 gr
🌿 Vanilla
Strawberry jelly:
🍓 Strawberries: 300 gr
🍚 Sugar: 3 tablespoons
🍮 Gelatin: 10 gr
🍋 Lemon juice
Decor:
🍓 Fresh strawberries: 300 gr
Instructions:
Countertop:
🍪 Crush 400 g digestive biscuits until they become powder.
🧈 Mix the crushed biscuits with 150 gr of melted butter.
🔄 Line a removable baking dish (22 cm)
🌰 Sprinkle the biscuit mixture in the mold and press evenly on its bottom.
❄️ Put the mold in the fridge to harden.
Cream:
🥣 Beat 600 gr of cream cheese with 150 gr of powdered sugar and vanilla in the composition. until you get a creamy composition.
🥄 Then gradually pour 500 g of whipped cream over the cream cheese mixture and mix for a few minutes.
🔥 In a small saucepan, dissolve 20 g of gelatin in 100 ml of water and let it hydrate for a few minutes.
🥄 Add gelatin over 100 ml of hot milk and mix well until it dissolves completely.
🍮 Pour the dissolved gelatin into the mixture of cream cheese and whipped cream and mix well.
🍓 Cut the strawberries in half and place each half on the edge of the mold, with the cut side facing outwards.
🍓 Pour the cream mixture over the top of the biscuits and the strawberries placed on the edge of the form.
📏 Level the surface and put the cheesecake in the fridge for at least 1-2 hours or until it hardens well.
Strawberry jelly:
🍓 Put 300 g of strawberries, 3 tablespoons of sugar and lemon juice in a saucepan and boil them until the strawberries soften and fall apart.
🔪 Using a blender, grind the cooked strawberries until you get a fine puree.
🔥In a small saucepan, dissolve 10 g of gelatin in 100 ml of water and let it hydrate for a few minutes.
🔥 Add 10 g of gelatin dissolved in it, mixing well.
🍧 Pour the strawberry mixture over the cooled cheesecake.
❄️ Put the cheesecake back in the fridge for another 2 hours or until the strawberry jelly is completely set.
Decor:
🍓 If desired, slice the rest of the strawberries and arrange them nicely on the surface of the cooled cheesecake, as a delicious decoration.
🍰 Cut the cheesecake into pieces and serve it cold.
