ItaliaSquisita returns to Tuscany together with one of the Italian chefs who has addressed the topic of fresh pasta with the most dedication and creativity. This time, however, Gaetano Trovato, 2 Michelin stars at the Arnolfo restaurant, develops a very particular thought also linked to vegetables; the same philosophy that made him one of the few Italians in the «Best Vegetables Restaurant in the World», the We're Smart guide rewarding the omnivorous restaurants making the most of their “plant based” cuisine. Chef Trovato and his assistant Andrea Godi present two versions of the very Tuscan pappardella with rabbit sauce which become "contemporary" thanks to the original use of vegetables.
