On this rainy weekend, this cottage pie is perfect for a cozy family night dinner. It's perfect for the whole family, even my one-year-old nephew enjoys it.😋
MEK Cottage Pie
Ground beef- 1 lb (90/10)
2 tbsp olive oil
1 chopped onion
1 cup chopped carrots
1 cup chopped celery
1 cup sweet peas
½ capsicum chopped
3 garlic cloves- chopped
3 tbsp tomato paste
½ tsp ground cumin
½ tsp red chili flakes
1 tsp paprika powder
1 tsp Italian seasoning
1 tsp salt or as per your choice
Black pepper powder ½ tps
2 bay leaves
3 tbsp four
2 cups water
A sprig of fresh rosemary
Some chopped parsley
For the potato crust:
2 lbs russet potatoes
2 tbsp melted butter
2 egg yolks
½ cup half n half
⅓ cup grated parmesan cheese
2 tbsp cream cheese
Salt and pepper
½ cup white cheddar for sprinkling on top (optional)
We will be baking it at 400 F in a 9/13 casserole dish.
Heat oil in a pan and add chopped onions to it. Sprinkle it with some salt and saute for three minutes. Then add ground beef to it along with the chopped garlic. Fry it for five minutes till the moisture dries.
Add carrots and celery to it along with the spices. Then sprinkle it with flour and fry it around for a few minutes. Now add water, tomato paste, and bay leaves. Let this mixture simmer on low till a thick gravy forms and coats the whole mixture.
Remove from heat and add peas and capsicum to it. Adjust its salt. Also, add your chopped herbs. Transfer the mixture to your casserole dish and smooth its top.
Put a slit on the potatoes' skin and boil them whole with the peel on in a pot full
Of water. After they are tender and are done cooking, drain them and let them cool a bit. Then cut them in half and pass them through a potato ricer. The peel will stay behind inside the ricer.
Add the rest of the given ingredients to it and whisk it till smooth and creamy. Add the whipped potatoes to a piping bag with a large round tip and pipe it on top of the meat mixture. Sprinkle with some cheese and herbs.
Bake at 400 F for 25 minutes on the middle rack position. Then turn on the broiler to high and broil the top till a nice golden color appears on the crust. Take it out and let it rest for 15 minutes before slicing and serving. Sprinkle with some parmesan and chopped parsley. Enjoy your comfort meal.
