In our Quick Start video we discussed setting the top and bottom heating elements. In this video, we’ll talk about the third heat zone at the front of the oven.
PizzaMaster ovens are engineered with a higher wattage element at the front to maintain heat even as the door is opened and closed. With the front heat zone the oven can recover faster, and you can utilize the whole stone. Some ovens require the operator to move all pizzas to the back of the oven, but with a front heat zone, you can maximize use of the whole hearthstone, which will increase your capacity.
The front heat zone is set in relation to the top heat setting. To adjust the front heat zone, you’ll press and hold the set button, and turn the main switch to 1 (which is ‘on’). The numbers A43 will show on the readout, then it will change to SFH for ‘set front heat.’ In the factory, front heat is set two higher (‘plus 2’) compared to the other heating elements. You may want to change this depending on where your top heat is set.
The PizzaMaster manufacturer recommends that the top heat should never be set below 3. If the top heat is set at 3 or 4, the recommendation is that the front heat zone should be at zero, which is the same heat as the other heat zones. If the top heat is set to 5 or 6, the front heat should be set at ‘plus 1.’ If the top heat is 7-10, the front heat should be set at plus two, which is the factory setting.
The reason for these recommendations is because lower temperature bakes, like deep dish or pan pizzas, tend to take longer so the door won’t be opened as frequently. The top heat for these is set lower, and the front heat zone will be set lower as well. On the other end, higher temperature bakes, like neapolitan and neo-neapolitan, utilize a higher top heat and bake quicker, which means the door opens more frequently and so they also need a hotter front heat zone.

Once you know where you should set the front heat zone, you can use the plus or minus sign to the desired level, and then press the Set button to keep it there. If you are planning to use plus two, you will probably be able to just leave it on the factory setting. You can check your oven’s ambient temperature and the front heat zone setting at any time by pressing and holding the set button.
