Cristiano Tomei, the charismatic Tuscan chef based in Lucca, masters two versions of the Italian potato gnocchi: the first one is the original recipe, quick and easy to prepare even at home, with a dressing inspired by the 80s, made of scampi, green tomatoes and beer. The second version, more elaborate, shuffles the cards using overcooked pasta, fish broth and no eggs.
