We are Pressure canning tomatoes for the pantry. You can pressure can tomatoes or you can water bath can tomatoes. Either way, you chose to can tomatoes you must add bottled lemon juice or Citric acid to the jars. Just make sure you go by The National Center For Home Food Preservation recommendations: nchfp.uga.edu/. They also have the recipe for both Pressure canning and Water bath canning tomatoes. There are also a lot of books with a lot of great recipes for both pressure canning and water bath canning. The books I've purchased and used are the Ball Book Of Canning And Preserving, Ball Complete Book of Home Preserving, and Ball Blue Book guide to home preserving. Each of these books has the information you need to start canning whether water bath or pressure canning and all the safety tips and explanations of processing times and pressure if Pressure caning for your altitude. These books have some of the same recipes but they all have different recipes too.
