A classic… Gnocchi Thursday! I love them, I usually make them with potatoes but this time I changed! Have you ever eaten them with pumpkin? They are delicious and if you add Ricotta to the pumpkin they will be even better and softer!
I seasoned them with Speck and Gorgonzola, in my opinion a perfect combination!
We are in pumpkin season and what better way to consume it and above all to let children eat it?
You can also season them simply with Butter and Sage or to your taste!
📝Ingredients:
500 g Pumpkin (weighed raw)
250 g fresh ricotta
300 g Flour (more or less may require more or less)
1 Egg
Extra virgin olive oil
Salt and pepper
100 g Gorgonzola cheese (sweet or spicy)
100 g Speck (ham)
Garlic, chili pepper
