Prep time:- 10 mins (plus 4 hours marinating)
Cooking time:- 1 hour approx (180 deg)
Serves 2-4 persons
Ingredients:-
I whole tenderloin of Pork.
For the marinade:-
Half a cup dark soy sauce
4tbs honey
1tbs sesame oil
2tbs white wine
1 whole red chili chopped
6 slices fresh ginger
4 cloves crushed garlic
2 whole star anise
Half cup water
A little cornflour
For the roast veg:-
Baby potatoes
Shallots
Carrots
Mushrooms
Peppers
Parsnips
Olive oil, thyme and garlic
Salt and pepper
Method:-
Place all the marinade ingredients apart from the cornflour, into a bowl and place the pork in the
marinade and refrigerate for a minimum of 4 hours. Turn regularly.
Prepare the veg and toss in the seasoned olive oil, thyme and garlic
Place the veg into a pre-heated oven.
Then put the pork into the oven in a covered dish.
The pork should take about 45 mins, depending on the size of the loin. Turn the pork half way
through the cooking process.
When cooked remove the pork from the oven and take it out of the marinade and leave to rest.
Meanwhile place the marinade sauce into a pan, removing the ginger and star anise.
Bring up to heat and thicken with a little cornflour.
Serve with the roast veg and pour the sauce over the pork
