Serves 2
Ingredients:-
4tbs sunflower oil
14 raw king prawns (shelled)
Half a chopped red pepper
Half a chopped yellow pepper
Half a chopped onion
Small cup of chopped mushrooms
2tbs tomato ketchup
3tbs soy sauce
3tbs white wine vinegar
2tbs sugar
Itsp five spice powder
2 cloves crushed garlic
1tsp cornflour to season
2 small bowls of cooked long grain rice (enough for 2 persons)
I large beaten egg (seasoned)
a little coriander to garnish
Method:-
Place 2 deep frying pans on a hob.
Put half the oil into each pan.
Heat the oil in one pan and add the onions and peppers.
Allow to cook down a little and then add the mushrooms
Allow to cook down a little further and then add the rest of the ingredients apart from the prawns.
Continue to cook until all the vegetables are cooked through.
If the sauce is a little thin, add the cornflour at this stage.
Heat the oil in the other pan and add the beaten egg.
When the egg is almost cooked through, begin to chop it with a spatula and then add the cooked
rice.
Mix well together using a chopping action.
In the meantime add the prawns to the sauce mix and cook through (2 mins)
Then serve together decorated with coriander (optional)
