Who thought the cookies we grew up in high school would become so famous the made it flat and added chocolate. My mom used to make these cookies too, but I've managed to tweeked it a little bit to make it the way I like it. I hope you will try it and maybe share it with someone you love or like...no matter, it's all good, even put your own little twist in it. Cheehooo!
Shortbread Cookies
In a standing mixer, cream together-
1 lb. (room temp) unsalted butter
8 oz (room temp) cream cheese
1 1/2 cup granulated sugar
Then add in 2 eggs
1 Tbsp vanilla extract plus 1/4 tsp almond extract
cream till soft
Sift together-
4 1/2 cups AP flour
1/2 cup Cornstarch
1 tsp salt
Optional: you can add nuts
Mix into butter mixer and place on to Saran Wrap forming into a rectangular shape. Put dough in refrigerator for at least 2 hours or chill over night until it becomes solid enough to cut with a knife.
Preheat oven to 350 degrees.
Cut cookies about 1/2 inch or less and lay on cookie sheet lined with parchment paper or on a silicon mat.
Bake for 10 minutes cooked to lightly golden on the bottom.
Remove and cool on rack.
Cover with melted chocolate and nuts.
