This presentation provides an introduction to Chapter 2 of the book titled: SIMPLE-G: A Gridded Economic Approach to Analysis of Sustainability of the Earth’s Land and Water Resources, edited by Iman Haqiqi and Thomas Hertel, and published by Springer. Chapter 2 introduces the economic theory underpinning the SIMPLE model of the global food system. It highlights the drivers of demand and supply and the role of economic responses - or price elasticities - in determining global resource demands in the presence of changing population, income, biofuel demand and agricultural technology.
